Extraction is conducted entirely by daily punching of the cap and the maceration lasts between 2 to 4 weeks, monitored by daily tastings.

Colour : deep red garnet
Nose : black cherries.
Mouth : well-structured with sweet meaty tannins.The wine had the heat and wildness of the Roussillon area.
